Green Beans with Bacon

A quick gourmet microwave green beans side dish.

Ingredients:

1 Egg, hard boiled, diced, optional
1 lb. Green Beans, fresh, frozen or canned
1/4 cup Water
1/4 lb. Bacon, raw, medium slice, about 4-5 slices
4 Green Onions
1/2 tsp. Salt
1/2 tsp. Lemon Pepper
1/4 lb. Mushrooms, sliced, optional
1/4 cup Almonds, slivered, optional

Directions:

If you are using a hard boiled egg as a garnish, hard boil the egg; cool, dice, and set aside.

Get a 1&1/2 quart microwave safe casserole that has a microwave safe lid.  If you are using canned Green Beans, drain and place in the casserole, then skip to the next paragraph.  If you are using fresh green beans, snap off the tips, clean and rinse.  Place the fresh or frozen green beans in the casserole and add the Water.  Microwave covered on high for 6 minutes, stirring after 3 minutes.  Let stand 5 minutes.  If you are using fresh green beans, again microwave covered on high for 6 minutes, stirring after 3 minutes.  Drain the water.

Dice the raw Bacon and Green Onions.  Add to the green beans along with the Salt and Lemon Pepper.  If you are using fresh Mushrooms, slice and add those now.  Microwave covered on high for 3 minutes.

If you are using sliced mushrooms from a jar, add those now.  If you are using the Almonds, add those now.  Regardless, stir and microwave covered on high for 3 minutes.  Let stand 5 minutes.

Garnish with diced hard boiled egg if desired and serve.

Notes:

I prefer both fresh green beans and fresh mushrooms and I use all the optional ingredients.
