Fried Cabbage

An easy way to make cabbage as a side dish.

Ingredients:

5 Tbsps. Butter, lightly salted
1/2 head Cabbage Head
1/2 tsp. Fresh Ground Black Pepper, to taste
1/4 tsp. Salt, to taste

Directions:

Melt the Butter over medium low heat in a large skillet which has a lid.  Cut the Cabbage Head half into wedges such that a part of the core remains with each wedge and the leaves remain intact attached to the core.  The number of wedges depends on the size of the head but you need to be able to lay them all on their sides in the skillet at one time. I usually make two cuts in a half head for 3 wedges.  Lay the wedges on their cut sides in the butter, cover and fry for 10 minutes.

Using a fork, turn the wedges over onto their other cut sides.  The edges of the leaves should be browned, if not, increase the heat.  Cover and fry another 10 minutes.

Reduce the heat to low.  Turn the wedges again.  Generously sprinkle with Fresh Ground Black Pepper and fry another 5 minutes uncovered.

Turn the wedges one final time.  Generously sprinkle with Fresh Ground Black Pepper and fry another 5 minutes uncovered.

Cut through the core at each leaf, separating the leaves.  Stir and sprinkle with Salt to taste.  Cover for 3 minutes to deglaze the pan.  Serve while hot.

Notes:

If "Fried" Cabbage sounds too unhealthy you can always call it "Sautéed" or "Caramelized" Cabbage.
