Zucchini Gratin

Fresh Mushroom Sauté

A simple sautéed mushroom side dish.

Ingredients:

1 lb. Mushrooms, fresh
6 ozs. Pearl Onions, raw, about 24 to 36
6 Tbsps. Butter, lightly salted
2 cloves Garlic
  Salt
  Pepper
4 tsps. Flour

Directions:

Fill a medium saucepan with water and bring to a boil.  Meanwhile, clean Mushrooms, cut stems flush with the bottoms of the mushroom caps, leaving some stem.  Slice each in half top to bottom through the cap and stem.  Set aside.  Add the Pearl Onions to the water and boil for 3 minutes.

Melt Butter in a skillet that has a lid.  Drain the pearl onions, rinse under cold water, slice root end from each pearl onion, squeeze gently toward the root end until the onion slips out into the butter in the skillet.  Sauté over medium low heat about 3 minutes.

If used, crush the Garlic into the melted butter with the pearl onions.  Sauté an additional 2 minutes.

Add the Mushrooms.  Cover and cook over low heat till tender, about 8 to 10 minutes, stirring to turn occasionally.  Season with Salt and Pepper.  Dust with the Flour.  Stir to coat and serve.

Notes:

If you use unsalted butter, be sure to add some salt along with the butter to draw the moisture out of the mushrooms.  Then after cooked, add the salt and pepper to your desired taste.
