Delicious chocolate cookies with white chips and a cherry

Ingredients:

1 cup Butter, softened
3/4 cup Sugar, divided usage
3/4 cup Dark Corn Syrup
1 Egg
1 tsp. Vanilla Extract
3&1/2 cups Flour
1/2 cup Cocoa
1/2 tsp. Baking Soda
1/4 tsp. Cinnamon
1&2/3 cups White Chocolate Chips, (10 oz. pkg.)
1/4 cup Toffee Bits, (optional)
24 Maraschino Cherries, whole, sliced in half

Directions:

Beat Butter and 1/2 cup of the Sugar in large bowl until well blended.  Add Dark Corn Syrup, Egg and Vanilla Extract, blending well.  Combine Flour, Cocoa and Baking Soda, gradually add to the butter mixture, blending well.  Cover and refrigerate dough 1 hour or until firm enough to handle.

Heat oven to 350°.  Lightly grease cookie sheet.  Combine remaining 1/4 cup of the Sugar and Cinnamon.  Shape dough into 1 inch balls, roll in sugar mixture and place on the cookie sheet.  Using your thumb, make a deep indentation in the center of each cookie.

Bake 6 to 8 minutes or just until set.  Remove from oven.  If necessary, use tip of spoon and press indentation in the center.  Immediately place 1 teaspoon of White Chocolate Chips in each indentation.  After several minutes, swirl melted chips with back of a teaspoon.  Sprinkle with Toffee Bits.  Press a Maraschino Cherry half in the center of each cookie, cut side down.  Remove from cookie sheet to a wire rack.  Cool completely.

Notes:

I've made these several times without ever having a problem.  But once I noticed that the White Chocolate Chips resisted melting and this was on a Summer day.  While the package's expiration date was still 7 months off, the package was probably about 7 months old and I suspect that might have been the reason.  So I'm recommending getting the freshest White Chocolate Chips you can find.
