Chocolate Covered Coconut Balls

Roasted Pecans

Praline Pecan Crunch

A sweet treat snack that is a hit with adults and kids alike.

Ingredients:

8 cups Quaker Oatmeal Squares, one 16oz. box
2 cups Pecan Halves
1/4 cup Butter, lightly salted
1/2 cup Brown Sugar, firmly packed
1/2 cup Light Corn Syrup
1 tsp. Vanilla
1/2 tsp. Baking Soda

Directions:

Preheat oven to 250°F.

Combine Quaker Oatmeal Squares cereal and Pecan Halves in a 13"x9" pan.

Melt the Butter in a microwave oven in a 2 cup or larger microwave safe measuring cup or bowl.  Measure the Brown Sugar and Light Corn Syrup.  Stir both into the butter.  Measure the Vanilla and Baking Soda and set aside.

Microwave the butter/sugar/syrup mixture on high for 1&1/2 minutes.  Stir and microwave on high an additional 1/2 to 1&1/2 minutes more until boiling.  Immediately stir in the vanilla and baking soda.  Stir vigorously to get it to foam and rise, overflowing the container and falling onto the cereal and pecans.  Drizzle all over the cereal and pecans and stir the mixture to coat evenly.

Bake 1 hour, stirring every 20 minutes.  Spread out on waxed paper or 2 large non stick baking sheets to cool.  Break into pieces and serve.

Notes:

I noticed that Poppycock® contains maple syrup so I have used 1/4 cup of maple syrup and 1/4 cup of light corn syrup instead of 1/2 cup of light corn syrup and I liked that.

One time I only had 4 cups of cereal but 6 cups of pecans so I used that ratio.  Very good, though pricey, and seems to diminish how many consumers attempt to pick out just the pecans.
